Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated grease, dust, or mold-like substance. In several locations in the kitchen.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Bowl in the soup station
24-06-4    Basic - Clean utensils or equipment stored in dirty drawer or rack. The rack on top of 3 compartment sink.
16-55-4    Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Concentration of sanitizer below 10 ppm. Advised operator to use 3 compartment sink to sanitize until dishwasher is fixed.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. On top of reach-in cooler with lid open next to RTE food items. **Corrected On-Site**
36-47-5    Basic - Hood and filters soiled with accumulated grease.
10-06-4    Basic - In-use utensil not stored with handle above the top of potentially hazardous (time/temperature control for safety) food and rim of the container. Bowl in bread crumbs with no handle resting inside container.
29-20-5    Basic - Standing water or very slow draining water in handwash sink next to fryers.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Multiple shakers on the cook line, bread crumbs in the prep area. **Corrective Action Taken**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Chicken breast at 50°, breaded chicken parm 60° - 3 hours passed - Corrective measures took place with Manager placing product in the freezer to quick chill. **Corrective Action Taken**
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. **Corrected On-Site**
03F-10-4    Intermediate - No written procedures available for use of time as a public health control to hold potentially hazardous (time/temperature control for safety) food. Pizza by the slice counter. Advised operator to complete document ASAP. I will forward the necessary paperwork with the inspection results.
