Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed duct tape used for handle on the reach in n cooler located in Athens back prep kitchen.

Observed trash and debris spilled on the kitchen floor in the back prep area. **Warning**
High Priority - Cooked meat/poultry cold held at greater than 41 degrees Fahrenheit.
Checked Canadian bacon 58°f sausage 46°f stored on top panel reach in cooler, less than than 4 hours.

High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area.
Observed four flying insects in the dishmachine area. **Warning**
Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine.
Observed terrible mold like growth on the top panel ice machine. **Warning**
Intermediate - Interior of reach-in cooler soiled with accumulation of food residue.
Observed large pool of water in the bottom reach in cooler used for salad. **Warning**

No proof of Food Manager Certification has two employees working in the kitchen one server. **Repeat Violation** **Warning**
Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine.
Observed no chlorine test strips for checking sanitizer for the dishmachine. **Warning**
