Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-04-4    Basic - Build-up of mold-like substance on nonfood-contact surface. Side of Frigidaire chest freezer in wait station.
36-37-4    Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas.
12B-02-4    Basic - Employee eating in a food preparation or other restricted area. -Observed employee drinking from a open container in food preparation area. **Corrected On-Site**
14-69-4    Basic - Ice buildup in reach-in freezer. Frigidaire chest freezer at wait station.
10-06-4    Basic - In-use utensil not stored with handle above the top of potentially hazardous (time/temperature control for safety) food and rim of the container. Scoop with handle found in rice, flour and corn starch containers.
06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Observed pork thawing in standing water at 3 compartment sink.
08B-13-4    Basic - Stored food not covered in walk-in cooler. Observed container with cooked ribs stored in walk in cooler not covered.
08A-01-4    High Priority - Raw animal food stored over cooked food. Observed raw shrimp stored over cooked rice in walk in cooler.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed cooked rice and ribs in walk in cooler not date marked. As per operator, both items were cooked on 09/29/2019.
