Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-06-4    Basic - Build-up of food debris, dust or dirt on nonfood-contact surface. Found the floor (under equipment, edges and corners) soiled with accumulation of debris.
23-24-4    Basic - Buildup of food debris/soil residue on equipment door handles. Found the exterior and door handles of coolers and other items with handles to be soiled with food debris. To correct clean as soon as possible, and clean on a more frequent schedule.
08B-44-4    Basic - Case/container/bag of food stored on floor in kitchen. Found cases of food on the kitchen floor, To correct store food to a more protected manner on shelf at least 6 inches off the floor. chef moved containers on to a table. Big bowl of cabbage **Corrected On-Site**
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Found beverage in the cooking/prep area cutting board without lid. Employee corrected by discarding bottle, and pic has been reminded that cups with lids and straws are allowed in food prep areas. ,
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Found rear exit door to have gaps where vermin can enter, to correct seal opening, cracks and gaps.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Found in kitchen that ceiling light was missing proper shielding, to correct replace correct shielding
27-10-4    Basic - No hot running water at mop sink. Found that no sinks in establishment had any hot water,due to hot water heater turned off. Manager relit and started hot-water heater. **Corrected On-Site**
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Found the door gaskets of the 2 door prep top cooler cracked and torn. To correct repair/replace door gaskets.
03A-15-4    High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Two door upright cooler e series at lettuce (55-57°F - Cold Holding); tomatoes (55-57°F - Cold Holding), chef removed items and called for service
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Found at mop sink no hose Bibb vacuum breaker, to correct buy a hose Bibb vacuum breaker
22-02-4    Intermediate - Accumulation of food debris/grease on food-contact surface. Found the kitchen area floor soiled with accumulation. To correct clean as soon as possible, and clean on a more frequent schedule.
22-05-4    Intermediate - Cutting board(s) stained/soiled.
27-16-4    Intermediate - Hot water not provided/shut off at employee handwash sink. Found that no sinks in establishment had any hot water,due to hot water heater turned off. Manager relit and started hot-water heater. **Corrected On-Site**

31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Found no paper towels available in the cooking/prep area kitchen handsink and in the bar area handsink. To correct provide paper towels and keep dispensers filled.
