Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Observed bottle of water stored in the cooler on the top panel located back preparation kitchen. **Corrected On-Site**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed rusty shelves inside walk in cooler
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet cloth stored on the prep counter.
10-05-4    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Observed tongs in dirty water on the grill on the cook line( back prep kitchen)
08A-20-4    High Priority - Raw animal foods not properly separated from each other in holding unit. Observed raw beef and seafood stored next to each other on the storage shelve inside walk in cooler. **Corrected On-Site**
03A-06-4    High Priority - Raw meat/poultry cold held at greater than 41 degrees Fahrenheit. Raw chicken 44°f stored on the top panel cooler less than 4 hours recommend quick chill using ice bags located in the back prep kitchen. **Corrective Action Taken**
11-07-4    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. The PIC does not know the Big 5 Foodborne illness working in the sushi area.
22-05-4    Intermediate - Cutting board(s) stained/soiled. Observed two white cutting board badly stained on the reach in coolers located in the back prep kitchen.
