Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-23-4    Basic - Floor/table fan has accumulation of food debris/dust/grease/soil residue. Observed on wall by three compartment sink.
08B-47-4    Basic - Food not stored at least 6 inches off of the floor. Observed plastic bottles of water stored on dry storage floor.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed knives between reach in coolers in front counter. Employee removed the knives. **Corrected On-Site**
06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Observed raw Bass fish thawing in standing water in three compartment sink. Manager removed the water. **Corrected On-Site**
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Observed in kitchen area by three compartment sink and in front counter
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed sugar container in cafeteria.
08A-09-4    High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Observed raw pork over precooked beef. Manager put them in the correct order. **Corrected On-Site**
41-02-4    High Priority - Toxic substance/chemical stored by or with food. Observed bucket with sanitizer by guava desert in cafeteria. Manager removed it. **Corrected On-Site**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed spray bottle with degreaser not labeled in ware washing area.
