Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-07-4    Basic - Employee personal items stored with or above food, clean equipment and utensils, or single-service items. Employee body spray stored on dry storage shelf near back door. Can of cat food stored on dry storage shelf near back door. Employee deodorant stored on dry storage shelf in ice machine room.
36-18-4    Basic - Floor cracked, broken or in disrepair. Floor to outside storage shed is broken in middle of shed, falling down onto ground. **Repeat Violation**
14-67-4    Basic - Gasket torn/in disrepair. Gaskets on refrigerated drawers on cook line are torn. Gasket of reach in cooler in wait area is torn. Gasket/door of walk in cooler in disrepair. Large gap at top of door to walk in cooler.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. No shield on light above ice machine.
35B-03-4    Basic - Outer openings not protected with self-closing doors. Back door not self closing. Also, door sweep on back door is extremely malleable, allowing for the possible entrance of vermin. **Repeat Violation**
06-01-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in an improper manner. Turkey in standing water in prep sink at end of cook line. Water turned on during inspection. **Corrected On-Site**
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Buildup observed on handle and side of door to walk in freezer. Buildup of food debris and surface rust on shelves of walk in cooler.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Multiple cloths on counters in kitchen area. Cloth on prep table in dish area.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Hash browns 47°. 48°. Sausage links 48°. Sausage patties 47°. Raw bacon 46°. Cooked potatoes 45°. Beef 46°. Turkey 46°. Meatloaf 47°. Items in refrigerated drawers on cook line. Items placed in cook line within the last 4 hours. Items moved to walk in freezer to rapidly cool. Ice bags also placed on top of items to help cook. **Repeat Violation** **Admin Complaint**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. Observed 6 droppings on top/in box of unused plates in dry storage shed. Observed 6 droppings on top of shelf dry storage shelf in dry storage shed. Storage shed is separate from main building. Storage shed contains unused restaurant equipment, canned goods and sealed single service items. **Admin Complaint**
53B-13-5    Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One missing for Robert.
14-78-6    Intermediate - Refrigerated drawers not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Gaskets on refrigerated drawers torn. Multiple items in unit discovered above 41°.
