Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-25-4    Basic - Build-up of grease/dust/debris on hood filters. Hood filters over stove and over fryers have build up of dust.
14-05-4    Basic - Cardboard used to line food-contact shelves. Cardboard used on walk-in cooler and walk-in freezer shelves.
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. In dining area, ceiling tiles and cents have build up of dust and mold-like substance. In kitchen, area above cookline has build up of dust and by dry storage entrance, build up of dust and mold-like substance. These ceiling tiles are acoustic tiles. Manager had employee start changing ceiling tile by dry storage room. **Corrective Action Taken**
36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Cove molding by 3 compartment sink has separated from wall. Also panel on wall at this area is in disrepair. Also tiles by soda storage racks on floor are missing. Also, multiple cracked floor tiles in kitchen and dining area by kitchen entrance.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Drink on prep table across from office. Manager moved during inspection. **Corrected On-Site**
14-70-4    Basic - Ice buildup in walk-in freezer. On floor in walk-in freezer, ice build up.
21-44-1    Basic - Sanitizer bucket stored with food, equipment, utensils, linens, single-service, or single-use articles. Sanitizer bucket stored on case of shortening. Manager moved during inspection. **Corrected On-Site** **Repeat Violation**
23-12-4    Basic - Walk-in cooler shelves soiled with encrusted food debris. Build up of white mold-like substance on shelves in walk-in cooler.
36-72-4    Basic - Walk-in cooler/walk-in freezer floor soiled. Walk-in cooler floor has build up of soil residue.
03B-02-4    High Priority - Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. Hot dogs in holding unit, 120°f. Manager voluntarily discarded during inspection.
12A-12-4    High Priority - Employee switched from working with raw food to ready-to-eat food without washing hands. Employee handled raw beef to place on flattop, then handled buns with no handwash or glove change. Manager intervened and corrected employee. **Corrected On-Site**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Liquid eggs in reach-in cooler on make line, 51°f. Manager not sure how long item has been out of temperature. Manager voluntarily discarded during inspection. **Repeat Violation**
01B-02-4    High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Liquid eggs in reach-in cooler on make line, 51°f. 41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. 3 spray bottles in dish area not labeled. Manager identified chemicals and labeled bottles during inspection. **Corrected On-Site**
