Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed cut cabbage at 52°f left at room temperature for approximately 45 minutes as per employee. Employee transferred the food to walking cooler. **Corrective Action Taken**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Observed egg noodles at 81°f in the kitchen ( as per person in charge for approximately 1 1/2 hr ). Employee started reheating . **Corrective Action Taken**
03F-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food identified in the written procedure as a food held using time as a public health control has no time marking. Observed sushi rice and sushi rolls without time marking. Employee marked them immediately. As per employee for less than 4 hrs. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. **Repeat Violation**
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Employee was coached about handwashing procedure. **Corrective Action Taken**
