Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Glass door - fish (50°F); beef (50°F). Per operator, items have been in unit approximately three hours. Advised operator to remove all TCS items from unit and refrain from using unit until such time all TCS foods are maintained at 41F or below. **Corrective Action Taken** **Repeat Violation**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw shell eggs stored over tomato sauce in left Cookline flip top. Operator stored all items properly. **Corrected On-Site** **Repeat Violation**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Chlorine - over 200ppm. Remade solution with operator. Chlorine 100ppm. **Corrected On-Site**
16-35-4    Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine.
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products.
