Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-12-4    Basic - Floors not constructed to be easily cleanable. All floors in kitchen. **Repeat Violation**
08B-38-4    Basic - Food stored on floor. Case of bib soda stored on floor at bar. Manager moved during inspection. **Corrected On-Site**

35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed 3 small flying insects in dish area.
03D-05-4    High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. 08A-03-5    High Priority - Raw animal food stored over or with ready-to-eat food in reach-in freezer - not all products commercially packaged. Open bag of uncooked chicken tenders stored over fries in cook line reach-in freezer. Manager moved chicken to bottom shelf during inspection. **Corrected On-Site**
01B-02-4    High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Pork in walk-in cooler, placed in cooler last night per manager, pork (45°f, 46°f, 44°f, 44°f, 46°F - Cooling). Pork was stacked in a tub with lid on.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Hose bib at smoker area, inside kitchen, missing backflow preventer.
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Interior of ice machine, top by ice chute has black mold-like substance. Manager cleaned during inspection. **Corrected On-Site**
