Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed in the food preparation area in the front

06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Observed bags of conch in standing water at the 3compartment sink

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed white towel on prep table
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed white containers of flour etc without labeling
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Observed raw fish over pickles in the walk in cooler
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. Observed tub of utensils stored on top of the handwash sink at the back area
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. Observed in the reach in cooler at the fryer station
22-12-4    Intermediate - Metal stem-type thermometer soiled.
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products.
