Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-08-4    Basic - Fly sticky tape hanging over food/food preparation area/food-contact equipment. Observed at the front counter inside glass display case, 3 sticky glue traps stored near desserts, danish. **Corrected On-Site**
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Kitchen near entrance, by make table.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Make table by cook line.
35B-05-4    Basic - Outer openings not protected during operation and vermin and/or environmental cross contamination present. Observed fronts doors were propped open during operation, due to this observed live bird walking in the dining area. Operator escorted live bird outside and closed the doors. **Corrected On-Site**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed towels stored on prep table in front of the cook line.
12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Cook, cracked eggs and touched spatula to flip steak on the flat top grill without washing hands or changing gloves. Operator instructed employee to wash hands and change gloves as needed. **Corrected On-Site**
22-21-4    Intermediate - Accumulation of black/green mold-like substance inside the ice bin. **Repeat Violation**
22-05-4    Intermediate - Cutting board(s) stained/soiled.
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by air conditioner. By make table in the kitchen.
35A-15-4    Intermediate - Wild bird present inside establishment. Observed in the dining room, 1 live bird walking towards the restrooms. Operator escorted the bird out and closed the doors. **Corrected On-Site**
