A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
-Observed several wet wiping cloth not stored in sanitizer bucket between uses at front counter. **Corrected On-Site** **Warning**
High Priority - All potentially hazardous (time/temperature control for safety) foods in walk-in cooler cold held at greater than 41 degrees Fahrenheit. Observed all TCS food cold held at 46 degrees Fahrenheit. Operator transfer food items and stored in reach in cooler. **Corrective Action Taken** **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
-Observed chlorine sanitizer solution at dishwashing machine at 00 ppm. Operator prime machine to 100 ppm. **Corrected On-Site** **Warning**
High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food.
-Observed employee cracked raw shell eggs , change gloves and then touch ready to eat food without washing his hands. **Corrected On-Site** **Warning**
High Priority - Rodent activity present as evidenced by 3 rodent droppings found on counter in prep area next to microwave. Operator clean and sanitizer area. **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked.
-Observed no date marked on cooked chicken in refrigerator. Chicken was cooked on 11/17/2019. **Warning**
