A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Build-up of food debris, dust or dirt on nonfood-contact surface.
Observed accumulation of food debris on the coffee cup racks. The staff started to remove the cups and clean the racks. **Corrective Action Taken**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Observed employee drink on the back prep table. The cup was discarded. **Corrected On-Site**
High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Observed the dish wash machine gauge only reaching 142°. **Repeat Violation**
High Priority - Hose attached to faucet at three-compartment/food preparation/handwash sink eliminating required air gap.
Observed the front line pre rinse below flood rim it was placed on it's hook, above flood rim. **Corrective Action Taken**
High Priority - Toxic substance/chemical stored by or with single-service items.
Observed chemical spray hung on a rack over single Serve items. It was then hung on the side of the garbage can. **Corrected On-Site**
Intermediate - Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained.
Observed multiple certificates were copies. **Repeat Violation**
