Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-44-4    Basic - Case/container/bag of food stored on floor in kitchen. Containers of soy sauce stored on the floor in the kitchen. Manager placed items on shelf. **Corrected On-Site**
29-18-4    Basic - Drain cover missing. Under the hand washing sink in the front of the kitchen. **Repeat Violation**
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Employee was informed and placed a hair restraint on. **Corrected On-Site** **Repeat Violation**
14-11-4    Basic - Equipment in poor repair. Door on the ice chest freezer broken and has exposed insulation.
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Manager removed and sanitized. **Corrected On-Site** **Repeat Violation**
12A-16-4    High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Employee left the cook line went outside to there vehicle then returned to the cook line without washing there hands. Instructed employee and manager on proper hand washing technique. **Corrective Action Taken**
12A-04-5    High Priority - Employee handled soiled dishes or utensils and then handled clean dishes and utensils without washing hands. Instructed employee and manager on proper hand washing technique. **Corrective Action Taken**
08A-18-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in freezer - all products not commercially packaged. Raw chicken over raw beef. Manager placed the chicken under the beef. **Corrected On-Site**
41-01-4    High Priority - Spray bottle with chemical/toxic substance stored near/on/above food preparation surface or food. Spray bottle containing cleaning stored next to food under the preparation table on the cook line. Manager removed the spray bottle. **Corrected On-Site**
31A-03-4    Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Ice scoop stored in the hand washing sink at the back of the kitchen. Manager removed the scoop. **Corrected On-Site** **Repeat Violation**
16-31-4    Intermediate - No proper chemical test kit provided for measuring the concentration of the sanitizer solution used for wiping cloths.
22-18-4    Intermediate - Soil residue in food storage containers. Flour, rice and sugar containers in the dry storage area. **Repeat Violation**
