Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed in sandwich station in front counter. **Repeat Violation**
51-09-4    Basic - Establishment did not report seating change that affects the license fee, Clean Indoor Air Act, sewage system approval or other related requirements. Observed establishment increased setting without reporting to the Division.
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed on prep table in kitchen area. Owner removed the towel. **Corrected On-Site**

06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed raw lamb thawing at room temperature inside dry storage.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Observed stand stainless steel reach in cooler in back kitchen.
23-09-4    Basic - Soiled reach-in cooler gaskets. Observed stand stainless steel reach in cooler and freezer inside kitchen.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed around kitchen. **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed sugar container in back kitchen.
08A-22-4    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in cooler. Observed raw shell eggs over raw pork inside Reach in cooler in front of cook line.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed around kitchen and in back yard.
22-22-4    Intermediate - Encrusted material on can opener blade.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed flans inside reach in cooler in kitchen from last Sunday March 15, 2020 not marked.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed spray bottle with water and vinegar in front counter not labeled.
