Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-03-4    Basic - Outer openings not protected with self-closing doors. Self closing door hinges broken on back screen door. **Repeat Violation**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Chick bean soup at front line area (109-125°F - Hot Holding, re-temp at 192°F in 15 mins after reheating back up for hot holding). **Corrected On-Site**
22-05-4    Intermediate - Cutting board(s) stained/soiled. Cutting board at three compartment sink stained.
22-22-4    Intermediate - Encrusted material on can opener blade. Can opener blade on prep table soiled in kitchen area. **Repeat Violation**
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. Food debris inside reach in cooler in kitchen next to stove area.
53A-01-6    Intermediate - Manager lacking proof of food manager certification. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ Manager not able to show proof of manager certification. Manager stated it was posted on wall but not sure where owner has placed it. **Repeat Violation**
16-35-4    Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine. No chlorine test strips at establishment for sanitizer testing. Manager stated owner will get more. They use quaternary for sanitizer but ran out and used bleach but still don't have either test trips in establishment. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towel at hand wash sink: 1. At front line next to tea machine 2.
