Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Observed in kitchen area at wall junction behind the kitchen range.
36-71-4    Basic - Floor drains/drain covers heavily soiled.
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. **Repeat Violation**
06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed frozen fish at kitchen counter as per employee in the process of defrost. **Corrective Action Taken**
14-20-4    Basic - Ripped/worn tin foil used as food-contact shelf cover. Observed in kitchen range covering the back splash area.
21-09-4    Basic - Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed at kitchen area.
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Observed at the steam table in front counter, shrimp in white sauce 125°F, eggs 120°F, beef stew 132°F. As per operator with less than 2 hrs.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. In kitchen area
16-33-4    Intermediate - Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer.
31A-03-4    Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Observed one container with chlorine stored inside the hand sink in kitchen area next to 3 compartments sink. **Corrected On-Site**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. At hand sink located in kitchen area.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed rice, shredded meat, and root vegetables prepared from previous day no date marked label.
