The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Item in reach in cooler across from prep table in kitchen:provolone cheese (46°F - Cold Holding).
Manager stated item in cooler for 30 minutes, returned to bottom side of cooler to reduce temperature to 41°F.
Items in walk-in cooler located in prep area:ranch (51°F - Cold Holding); blue cheese (52°F - Cold Holding); chicken (51°F - Cold Holding); cole slaw (51°F - Cold Holding); romaine lettuce (49°F - Cold Holding); feta cheese (52°F - Cold Holding); cheddar (51°F - Cold Holding); pepper jack cheese (54°F - Cold Holding). Manager stated items stored in cooler over night. **Warning** - From follow-up inspection 2020-06-12: Chicken 48°F,49°F. Tomatoes 48°F. Ranch 47°F. Owner stated items made temperature upon arrival, the door had been opened and closed quite often. Ambient temperature in walk in cooler 51°F. Owner had manager move items out of walk-in to another cooler and placed other items in freezer and called repair man for a follow up visit as they were at the establishment the previous day. **Admin Complaint**
