Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation.
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment.
14-69-4    Basic - Ice buildup in walk-in freezer. **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board.
23-14-4    Basic - Shelf under preparation table soiled with food debris.
23-09-4    Basic - Soiled reach-in cooler gaskets.
08B-12-5    Basic - Stored food not covered. Observed pork , beef, tostones stored in walk in freezer with no cover
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface.
36-26-4    Basic - Wall soiled with accumulated black debris in dishwashing area.

21-09-4    Basic - Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean.

12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed employee crack raw shell eggs, then handled clean plates without changing gloves or washing hands. Explained to owner and employee importance of hand washing procedures. **Corrective Action Taken**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit. Observed raw chicken stored above raw beef in walk in cooler. **Corrected On-Site** **Repeat Violation**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed ham (56°F - Cold Holding); cheese (58°F - Cold Holding); pork (73°F - Cold Holding) all cold holding at room temperature in front counter area, as per employee, food had been there approximately 1 hour, employee put in cooler to rapid chill. **Corrective Action Taken**
22-22-4    Intermediate - Encrusted material on can opener blade.
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. 16-34-4    Intermediate - No quaternary ammonium chemical test kit provided when using quaternary ammonium chemical sanitizer at three-compartment sink/warewashing machine. Also observed no chlorine test kit.
