Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. Observed 2 CO2 tanks located 1 at outside bar, 1 next to bag in a box syrup not properly secured.
36-36-4    Basic - Ceiling tile missing. Observed approximately three tiles missing above kitchen preparation area.
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed above kitchen area around hoods.
24-05-4    Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed ice chute containers not inverted in a protected manner. Chef relocated. **Corrected On-Site**
24-14-4    Basic - Clean utensils stored between equipment and wall. Observed 2 knives stored between 3 compartment sink and wall. Operator removed. **Corrected On-Site**

13-07-4    Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed operator engaging food preparation with personal wristwatch.
36-22-4    Basic - Floor area(s) covered with standing water. Observed preparation area, below racks. Next to walk-in cooler door.
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Observed below ice machine. Operator cleaned and sanitized. **Corrected On-Site**
08B-47-4    Basic - Food not stored at least 6 inches off of the floor. Observed boxes of frozen shrimp stored on walk-in freezer floor market area.
14-69-4    Basic - Ice buildup in reach-in freezer. Observed unit next to lobster tank.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed stored on oven handle on kitchen area.
14-35-4    Basic - Interior of ice bin with rust that has pitted the surface. Observed at outside bar area.
14-73-4    Basic - No container installed for catching grease from hood drip tray. Observed at kitchen area.
23-09-4    Basic - Soiled reach-in cooler gaskets. Observed at kitchen area, multiple reaching coolers.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed on multiple units inside.
36-26-4    Basic - Wall soiled with accumulated black debris in dishwashing area. Observed under and on the side of 3 compartment sink.
29-03-4    Basic - Water draining onto floor surface. Observed from 3 compartment sink, drainboard draining water to the floor next to dishwasher machine.
29-11-4    Basic - Water leaking from ac vents. Observed water leaked from ceiling. From ac duct to the floor. Located next to walk-in freezer market area.
08A-05-6    High Priority - Raw animal food stored over ready-to-eat food. Observed raw fish stored above ice cream open bucket container. Located market walk-in freezer. Operator removed and discarded ice cream.
31A-02-4    Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. Observed multiple containers blocking free access to hand wash sink located next to dishwasher machine. Operator removed containers. **Corrected On-Site**
51-16-7    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observed hand wash sink and dump sink relocated on outside bar area, ice machine present outside bar, dump sink and ice bin added front of house, new hood system added on kitchen area; service window transformed to exit door for food runners; sitting tables area added on recreational area not showed in plans; hand wash sink added on waitress station.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed spray bottle as per operator with sanitizer not labeled. Manager labeled. **Corrected On-Site** **Repeat Violation**
29-28-4    Intermediate - Water treatment device has not been inspected or serviced according to manufacturer's instructions. Observed no proof of water filter at ice machine was replaced within a year.
