Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. To employee drinks on counter next to steam table on cook line.
40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee body spray sorted on shelf above Togo containers. 3 bottles on rack above Togo containers in wait area.
35B-03-4    Basic - Outer openings not protected with self-closing doors. Back door. Also, door sweep is made of a very mailable plastic leaving door with a gap.
12A-04-6    High Priority - Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. Employee working in dish area.
50-17-2    High Priority - Operating with an expired Division of Hotels and Restaurants license. Expired 06/01/2020
08A-05-6    High Priority - Raw animal food stored over ready-to-eat food. Raw shell eggs stored on shelf above mayo in reach in cooler at wait station.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Corned beef 50°. Dairy wash 45°. Sliced ham 48°. Sausage 56°. Cooked potatos 51°. Items in refrigerated drawers on cook line. Per manager items placed in unit at open. Manager placed ice inside of unit during inspection to help reduce temperature. Potato soup 46°. Item in bottom of flip top reach in cooler on cook line. Butter packets 61°. Items on counter in wait station at start of inspections. Item placed back into cooler to reduce temperature. Mushrooms 46°. Soup 47°. Feta cheese 46°. Items in outside walk in cooler. Large pans of cooked potatoes placed on shelf below products approximately 30 minutes before inspection. Observed ice buildup on coils of walk in cooler. Manager placed products in ice during inspection to reduce temperature. Manager called for service on all units. **Repeat Violation** **Admin Complaint**
31B-03-4    Intermediate - No soap provided at handwash sink. Soap missing at hand washing sink in dish area.
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One expired.
