A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - A minimum of one bathroom facility is not available for public use.
Establishment is allowing walk in take out orders but not allowing them restroom use. Manager states signs posted per district manager. Reeducated on food code requirements. Basic - Employee experiencing persistent sneezing, coughing, runny nose, or discharge from eyes working with food, clean equipment or utensils, and/or unwrapped single-service items.
Employee observed entering front counter area coughing heavily. Manager took employee temp prior to shift and did not have fever. Logged in book . Also asked screening questions of employee including symptoms and employee answered "no"
Manager states they were not coughing earlier. Employee stated they changed medicine and allergies were causing the cough. Manager immediately stopped employee and sent home. **Warning**
Basic - Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable.
Exterior plastic on chest freezer lid peeling **Warning**
Basic - Single-service articles stored next to handwash/food preparation sink exposed to splash.
Open box of french fry containers under paper towel dispenser at front counter **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
All items in walk in cooler. Manager states walk in cooler fan went off for defrosting within past hour. Temperature log reads safe temperature for walk in cooler of 34° at 5:50 am , and employee took temp of 37° at 11 am.
Recommend moving cases of bacon, ham, cream to freezer to rapid chill and moving lettuce to front line cooler to store until repair
