Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
36-11-4    Basic - Floors not maintained smooth and durable. At dish machine area. **Repeat Violation**
14-69-4    Basic - Ice buildup in walk-in freezer.
10-12-5    Basic - In-use ice scoop stored on soiled surface between uses. Observed ice scoop on top of soiled ice machine.
22-08-4    Basic - Interior of oven has accumulation of black substance/grease/food debris. **Repeat Violation**
16-46-4    Basic - Old labels stuck to food containers after cleaning.
29-03-4    Basic - Water draining onto floor surface. Observed water draining on the floor at hand wash sink at cook line.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed powdered sugar container without a label. Operator put label on container. **Corrected On-Site**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0 ppm. Operator advised to set up three compartment sink. Per Operator, establishment does not use three compartment sink therefore there is no sanitizer available. Operator was not aware that bleach was available at ware washing area and could be use at three compartment sink for sanitization.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Items placed in coolers at 7:00 am today or overnight per operator. Items in cooler pass 11:00 am. Cook line- under grill drawer hash browns, shredded cheese, diced ham- 48-52. Wait station- milk- 48-52. 02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed milk in reach in coolers at wait station at 48-52. Per operator milk was placed in unit at 7:00 am, temperature taken at about 10:15. Operator has half hour to use milk or discarded at 11:00.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed knife stored in hand wash sink at wait station. Employee removed knife. **Corrected On-Site**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer in spray bottles. Observed spray bottles labeled Surface Cleaner Sanitizer RTU in use.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Wait station, operator provided paper towels. **Corrected On-Site** **Repeat Violation**
31B-05-4    Intermediate - Paper towel dispenser at handwash sink not working/unable to dispense paper towels at cook line.
53A-17-1    Intermediate - Person in charge not ensuring employees are properly maintaining the temperatures of time/temperature control for safety foods during cold holding and sanitization at ware washing area. Operator uses pH meter to check chlorine sanitizer although establishment has a chlorine test kit.
