Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed 19 boxes of beef steak of 20.24 lbs. thawing a room temperature at chicken area. Operator was informed the products need to be moved to the reach in cooler. **Corrective Action Taken** **Warning**
06-08-5    Basic - Time/temperature control for safety food thawed under water that was barely running/dripping. Observed raw chicken thawing in prep sink under dripping low pressure water. Operator moved the raw chicken to a container and to the reach in cooler. **Corrected On-Site** **Warning**

50-17-2    High Priority - Operating with an expired Division of Hotels and Restaurants license since October 1, 2021. The license was paid. Observed the license was printed. **Corrected On-Site** **Warning**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed Chicken bag open over cooked yucca inside reach in freezer. Operator removed the vegetables and yuca of the reach in freezer to another reach in freezer. **Corrected On-Site** **Warning**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef stored over cooked beef and beef tacos at reach in cooler located at kitchen area. **Warning**
28-26-4    High Priority - Sewage/wastewater backing up through floor drains. Observed wastewater backing up through floor drain located in between grill and food preparation table, next to three compartment sink. During the inspection, a plumber started to work to unclogged the floor drains in the kitchen area. **Corrected On-Site** **Warning**
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed cooked beef (75 - Cold Holding) at preparation table. As per manager food was prepared on the previous day. Observed raw beef (55-59 - Cold Holding) at reach in cooler located at front counter. As per manager the product was prepared on the previous day. Operator discarded the product. **Corrective Action Taken** **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw beef (67 - Cold Holding); raw chicken (57 - Cold Holding); raw beef (54 - Cold Holding) at kitchen area. As per person in charged food has been out for less than one hour. And cooked beef (75 - Cold Holding) at preparation table. Operator moved the products to the reach in cooler for rapid cooling. **Corrective Action Taken** **Warning**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked beef beef (105 - Hot Holding); beans (95 - Hot Holding) at preparation table. As per operator for less than one hour. Operator moved the products to the stove to be reheating to 165°F. **Corrective Action Taken** **Warning**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener soiled. And cutting boards soiled at preparation table. **Warning**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed hand wash sink blocked by a portable shelf. Operator moved the shelf. **Corrected On-Site** **Repeat Violation** **Warning**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Paper towels was provided. **Warning**
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products. **Warning**
53B-02-5    Intermediate - No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed three employees at kitchen area no proof of employee training. As per manager they were hired more than 60 days. **Warning**
