Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-09-1    Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed salmon inside ROP packages completely sealed inside a reach in cooler. Operator opened the packages. **Corrected On-Site**
32-12-5    Basic - Covered waste receptacle not provided in women's bathroom. **Repeat Violation**
40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee purses next to glassware at front counter.
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Observed employee working at the kitchen with no hair restraint. Employee wore a cap. **Corrected On-Site** **Repeat Violation**
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed accumulation of old debris behind cooking equipment.
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. observed at the reach in freezer at the front container. **Repeat Violation**
33-11-4    Basic - Missing drain plug at dumpster. Operator closed it with plastic bags. **Corrected On-Site**
14-11-4    Basic - Reach in freezer gaskets in poor repair. Observed gasket torn in the reach in freezer located in the back prep area.
08B-12-5    Basic - Stored food not covered. Observed inside walking cooler . **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed inside the walk in cooler. **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed sugar in a plastic container no labeled. Owner labeled the item. **Corrected On-Site**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed a employee who started working with food and put the gloves on without washing his hands. Employee was educated about washing hands before engaging with food. Employee washed his hands.
08A-04-5    High Priority - Raw animal food stored over or with washed produce. Observed raw beef above washed vegetables. Operator inverted the storage position. **Corrected On-Site**
01B-14-4    High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed 2 broken shell eggs at the reach in cooler preparation area. Operator discarded them. **Corrective Action Taken**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed a sponge inside the hand wash sink at the front area.
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed the kit was wet and it was discarded.
