Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-12-5    Basic - In-use ice scoop stored on soiled surface between uses. Observed ice scoop left on the ice machine side surface. Ice scoop was sent to the dishmachine. **Corrective Action Taken**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed on oven handle. Manager remove it. **Corrected On-Site** **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Person in charge removed them. **Corrected On-Site**
35B-02-4    Basic - Insect control device installed over food preparation area. Observed insect control device installed above coffee machine and clean coffee cups.
16-46-4    Basic - Old labels stuck to food containers after cleaning. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. Observed At the bar area.
12A-17-4    High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands. Server was coached about handwash procedure.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs above pasteurized liquid inside walk in cooler. Person in charge inverted the storage order. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Pickle Veggies (112 F - Hot Holding) in the kitchen area. Pickle veggies were reheated to 168°f.
01C-05-4    Intermediate - Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment.
