A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Establishment operating with a non seating license with current seating for 20 in restaurant. Discussed with operator and provided seating change form.
Basic - Time/temperature control for safety food thawed in an improper manner.
In kitchen 3 compartment sink raw shrimp thawing in standing water. Discussed with operator who turned on water. **Corrected On-Site** **Warning**
High Priority - Nonfood-grade bags used in direct contact with food.
In reach in freezer thank you bags used in direct contact for storage of raw chicken. Discussed with operator remove chicken from bags. **Repeat Violation** **Admin Complaint**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
In reach in cooler raw shell eggs stored over rice discussed with operator who corrected storage of products. **Corrected On-Site** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
Approximately 100+ rodent droppings In kitchen under cabinets on top of open boxes of single service utensils. Under cabinets are approximately 50 individual portioned packets of ketchup that have been chewed open and eaten.
Approximately 4 rodent dropping on top of reach in cooler in kitchen at front counter.
Approximately 5 rodent dropping in kitchen next to containers of frying oil.
Discussed with operator to clean and sanitize all areas. **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
In kitchen cutting board at salad station heavily grooved and no longer cleanable. Being used to cut chicken wings. Discussed with operator to repair or replace. **Repeat Violation** **Admin Complaint**
