Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-17-5    Basic - Floor tiles missing and/or in disrepair. Two Tiles in walk-in-cooler missing
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Ice buildup up on floor of walk-in-freezer
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Single serve lids stored face up and not protected.
08B-12-5    Basic - Stored food not covered. Tomato's in walk-in-cooler not covered
12A-18-4    High Priority - Employee dried hands on clothes/apron/soiled towel after washing. Cook wearing gloves touched waist and apron, then removed gloves and put on gloves without washing hands. Then handled cooking utensils and continued cooking on the grill. Cook wearing gloves picked up lid from floor, then returned to handling cooking utensils and aluminum pan, without removing gloves, washing hands and putting on clean gloves. Discussed with Manager. **Admin Complaint**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw Chicken stored over precooked Chicken in drawers under grill.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Mold like substance on the underside of the food contact surface of the interior of the ice machine in kitchen. Mixed egg lid fell on the floor and cook placed lid on container.
