A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed two flying insects in server area.
Observed one flying insects in back kitchen area.
Observed approximately 10-15 flying insects in back hallway storage area with is not enclosed to the outside where trash/ single serve items/ and produce delivery was observed during inspection. Observed flying insects landing on unwashed produce. **Warning** - From follow-up inspection 2024-11-06: Observed two flying insects in server area.

Observed one live roach on shelving in dry storage hallway. Person in charge killed and discarded.

High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Salsa and whipped cream stored in front server cooler at 46-53F overnight per person in charge. Ambient temperature of unit 44F during inspection. Observed ice buildup in back of unit.
In drawers under cook line, beef, chicken 50-53F person in charge states moved from walk in cooler less than 4 hours ago. Person in charge moved to reach in freezer. **Corrective Action Taken** **Repeat Violation** **Admin Complaint** - From follow-up inspection 2024-11-06: No items stored in reach in cooler at time of inspection, salsa held on ice with ice not around product at 60F person in charge iced items down properly.
In drawers chicken, beef at 46F. Drawers do not easily close. Ice observed on items, but ineffective as not totally covering products. Person in charge states have had open for lunch. Items out of temperature for less than 4 hours per person in charge. Moved to reach in freezer and called for repair service during inspection. **Admin Complaint** **Corrective Action Taken**
