Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-05-4    Basic - Cardboard used to line food-contact shelves. There is cardboard lining a shelf in dry storage underneath bags of raisins. **Warning**
08B-20-4    Basic - Damaged/spoiled/recalled food not properly segregated. On a shelf, with undamaged cans there is a 29 ounce can of black beans with a severely dented rim. See stop sale. **Warning**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. There are tongs on the oven door handle. Operator removed the tongs. **Corrected On-Site** **Warning**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Damaged/spoiled/recalled food not properly segregated. On a shelf, with undamaged cans there is a 29 ounce can of black beans with a severely dented rim. See stop sale. **Warning**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Inside a bucket in the walk in cooler fully cooked andouille sausage is stored under raw ground beef. **Warning**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. There are two live roaches on a television set on the wall in the fry station. **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the make table cooler in the fry station French toast batter (48F - Cold Holding); corned bedf hash (47F - Cold Holding).
