A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed arepas (82F - Cold Holding); raw steak (47F - Cold Holding); churrassco (58F - Cold Holding); raw chicken (56F - Cold Holding) at preparation cooler at cook line. As per employee, arepas were held at room temperature for less than 2 hours and raw steak and raw churrassco were placed indie unit 30 minutes prior. Employees placed bags of ice over products. Observed guacamole with tomatoes (52F - Cold Holding); cut tomatoes (52F - Cold Holding); cut lettuce (53F - Cold Holding); cooked shrimp (42F - Cold Holding) at preparation cooler across from char grill. As per employee, for less than 2 hours. **Corrective Action Taken** **Repeat Violation** **Warning**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked maduro (112F - Hot Holding) at steam table. As per employee for approximately 30 minutes. Employee reheated product to 197F. Observed cooked potatoes (96F - Hot Holding) at room temperature inside fryer basket. Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels available at hand sink at cook line. **Warning**
