A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
-Observed accumulation of black substance buildup inside ice machine. **Warning**
Basic - Box containing roll/sheets of aluminum foil/plastic wrap/parchment paper/deli tissues has old food debris/soil residue inside.
-Observed accumulation of old food debris in box containing plastic wrap. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed accumulation of brown like substance buildup on can opener blade. **Warning**
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
-Observed an in-use wet wiping cloth in kitchen not stored in sanitizer solution between uses. Operator placed cloth in sanitizer solution. **Corrected On-Site** **Warning**

-Observed 2 badly dented cans with marinara sauce in dry storage, operator informed and stop sale issued. **Warning**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
-Observed chef touch raw meat change gloves without washing his hands and continue to touch ready to eat foods. **Warning**

High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse.
Observed all TCS foods in upstairs walk in cooler at 46-48F. Per operator, all items placed in unit from 03/09/2025 and beyond. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.

-Observed accumulation of black substance buildup on can opener blade. **Warning**
Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again.
-Observed cooked ribs transfer from freezer to walk in cooler from yesterday without date marked **Warning**
