A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed; 20+ live roaches in paper towel dispenser above hand wash sink closest to cook line. Person in charge began cleaning and disposing live roaches.
15+ live roaches in knife storage box hanging on center flip top cooler with knives stored inside.
10+ live roaches on top of standing reach in cooler in back dry storage area.

15+ live roaches in interior of large standing oven next to steam table.

High Priority - - From initial inspection : High Priority - Roach excrement and/or droppings present.
Observed 200+ roach droppings on top of standing reach in cooler in back dry storage area. **Warning** - From follow-up inspection 2025-04-17: At callback observed; 25+ roach droppings on top shelf of dry storage near box of unused rice cooker.
15+ roach droppings on prep shelf to right of flip top cooler closest to kitchen entrance. **Admin Complaint**
High Priority - - From initial inspection : High Priority - Rodent activity present as evidenced by rodent droppings found.
Observed 20+ rodent droppings on ground under hand wash sink next to cook line and under cook line. Person in charge began cleaning rodent droppings. **Corrective Action Taken** **Repeat Violation** **Admin Complaint** - From follow-up inspection 2025-04-17: At callback observed no evidence of rodent droppings. **Time Extended**
