The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Basic - Grease on the ground and/or pad around grease receptacle. No grease receptacle observed. Observed old grease stored in 5 gallon jugs on rear pad. Observed grease on ground by fence. **Warning**
Basic - Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. 1. Kitchen hoods heavily soiled with grease. 2. Missing catch pan Kitchen hoods. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw chicken over ready to eat commercially processed vegetables in reach in freezer. **Warning**
High Priority - Roach activity present as evidenced by live roaches found. 1 live roach in water heater room on door panel. No door between water heater room and kitchen. 2 live in trap in water heater room. No door between water heater room and kitchen. 1 live roach on cook line next to stove and steam table. 6 live roaches behind white reach in freezer in prep area. 2 lives roaches on wall above grey reach in freezer. **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found. Approximately 25 dropping observed underneath two door stainless reach in cooler. **Warning**
High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles.
