A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
In kitchen approximately 5 dead roaches on floor in front of reach in coolers.
In kitchen approximately 20 dead roaches under reach in cooler.
In kitchen approximately 20 dead roaches behind flip top cooler.
In kitchen approximately 15 dead roaches in dry storage room.
In kitchen approximately 10 dead roaches along wall by back door.
Discussed with operator who began cleaning. **Warning**
Basic - Floor and wall junctures not coved in food preparation/storage/warewashing areas or bathroom.
In kitchen cove molding missing along floor and wall, approximately 100 live roaches crawling in and out of wall juncture, discussed with operator to replace cove molding. **Warning**
High Priority - Container of medicine improperly stored.
In dry storage area of kitchen containers of medications stored above containers of sweet peppers, discussed with operator to remove products. **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
In kitchen approximately 3 live roaches crawling on floor in front of coolers.
In kitchen Approximately 100 live roaches, inspector moved box of glass ware on floor next to flip top cooler and roaches began to crawl out of hole in wall and card board box, crawling on wall, shelf of clean and sanitized plates, sealed containers of dry seasoning, floor, flip top cooler.
Operator began to kill roaches and chose to discard of all products. **Warning**
High Priority - Toxic substance/chemical improperly stored.
In dry storage area tube of roach pesticide gel stored above clean and sanitized dishes, discussed with operator to remove. **Warning**
