Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
Observed at front bar - personal phone stored on prepping table. Employee removed and stored correctly.
Observed in kitchen - purse stored on top of satchel of rice. Employee removed and stored correctly. **Corrected On-Site**
Basic - Opened employee beverage container in a cold holding unit with food to be served to customers.
Observed bottle of water stored in cooler in front of dishwasher machine.
Basic - Time/temperature control for safety food thawed in an improper manner.
Observed beef thawing at room temperature. Operator place item under water. **Corrected On-Site**
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
Observed at front bar - expo bar - and cook line. Operator set up sanitation buckets. **Corrective Action Taken**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands.
Observed employee crack eggs then proceeded to cut and serve washed avocado - employee discarded avocado at will. Employee removed gloves and washed hands properly. **Corrected On-Site**
High Priority - Nonfood-grade containers used for food storage - direct contact with food.
Observed at reach in freezer - tomatoes and cooked pork stored in super market bags. Employee removed and stored in food grade bags. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed at flip top cooler in kitchen - blood sausage (56F - Cold Holding); chorizo (57F - Cold Holding) as per employee item held out of temperature for approximately 1 hour, items not portioned or prepared today. Operator stored item in another cooler. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
Observed under heat lamp in kitchen - fried plantains (131F - Hot Holding) as per employee item held out of temperature for approximately 30 minutes. Employee moved items to hottest part of lamp.
Observed at steam table in kitchen - ribs (55F - Hot Holding) as per employee item held out of temperature for approximately 2 hours. Employee placed item in cooler. **Corrective Action Taken**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Observed at walk in cooler - beef broth not date marked.
