A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Vents in walk in cooler covered with dust and mold like substance or slime.
Basic - Dead roaches on premises. Four dead roaches observed on floor at hot water heater. Separate room when no food is stored or prepared. Operator cleaned up dead roaches during inspection. **Corrected On-Site**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Cell phone on front cooks line counter, operator removed phone. This is a repeat violation from previous inspection dated 03-12-2025 **Corrected On-Site** **Repeat Violation**
Basic - In-use tongs stored on equipment door handle between uses. Tongs hanging on skillet next to back prep range. Operator removed tongs to be washed and sanitized. **Corrected On-Site**
Basic - Standing water in bottom of reach-in-cooler. Standing water inside reach in cooler in server station. This is a repeat violation from previous inspection dated 03-12-2025 **Repeat Violation**
High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Shelled eggs held on time and not time stamped. Per operator eggs were removed from refrigeration 2 hours prior and recorded time properly. **Corrected On-Site**
