Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-36-5    Basic - Interior of refrigerator or freezer in disrepair/has exposed insulation. Gaskets on reach in cooler doors on cook line torn, hanging.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Walk in cooler fan covers heavily soiled with dust/mold like substance. Chemical storage shelves in wait station soiled.
14-20-4    Basic - Ripped/worn tin foil used as shelf cover and wall cover in kitchen areas.
25-05-4    Basic - Single-service articles improperly stored. Box of single use quart containers stored on floor near back storage area.
29-49-6    Basic - Standing water in bottom of sushi prep reach-in-cooler.
08B-17-4    Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed pineapple stored over containers of ready to eat curries in walk in cooler.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Water leaking from ice bin in wait station.
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. No time mark on fried rice held on cook line for less than 3 hours. Operator applied appropriate time mark. **Corrected On-Site**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. vegetable sweet sour soup (54F - Cooling at 12:55 for 2 hours, 54F at 1:25) cooling in deep covered pot in walk in cooler. Operator removed covering and mixed soup to increase cooling rate. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade on cook line soiled. **Repeat Violation**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
