A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor area(s) covered with standing water.
Standing water observed on floor in back kitchen and by ice machine. Person in charge states changed water filters, ice melted on floor at ice machine. Person in charge began cleaning during inspection. **Corrective Action Taken** **Repeat Violation**
Basic - Single-service articles improperly stored.
Case of to go gallon containers stored on floor in upstairs storage area. Person in charge began raising. **Corrective Action Taken** **Repeat Violation**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Ice cream base with dairy at 46F on right side of ice cream machine well. Person in charge states had issues with it today and it was installed incorrectly. Person in charge began draining to discard. **Corrective Action Taken**
High Priority - Toxic substance/chemical improperly stored.
Spray bottle with blue chemical stored on prep area equipment. Person in charge moved to appropriate location. **Corrected On-Site**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
Vacuum breaker in incorrect location at mop sink. Needs to be added to non chemical side of 1st splitter with green hose attached.
Intermediate - Handwash sink used for purposes other than handwashing.
Observed items stored in back hand wash sink by triple sink. Person in charge removed. **Corrected On-Site**
Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink.
Water at hand wash sink by triple sink only reaching 73F after running for extended time. Person in charge states may be turned off. Person in charge states has work order in for sink. **Corrective Action Taken**
