Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. There is a mold like substance on the ice chute and interior walls of the ice machine. **Warning**
Basic - Accumulation of dead or trapped birds, insects, rodents, or other pests, in control devices. There are approximately 30 dead roaches on glue pads in the kitchen. **Warning**
Basic - Bowl or other container with no handle used to dispense food. There is a bowl with no handle in a container of cooked rice in the make table cooler in front of the flat top grill. Operator removed the bowl. **Corrected On-Site** **Repeat Violation** **Warning**
Basic - Carbon dioxide/helium tanks not adequately secured. There are multiple unsecured carbon dioxide tanks by the bag in box soda storage. **Warning**
Basic - Dead roaches on premises. There are three dead roaches in the hand washing sink by the walk in cooler, five dead roaches behind shelving by the walk in cooler, nine dead roaches under the ice machine. Operator swept up the dead roaches and sanitized the areas. **Corrective Action Taken** **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. There is a buildup if grease on the hood filters. **Repeat Violation** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the make table cooler closest to the walk in cooler cooked shrimp (48F - Cold Holding); cooked fish (50F - Cold Holding); vegetable spring roll (50F - Cold Holding). Operator moved contents of cooler to the walk in cooler. **Corrective Action Taken** **Warning**
