A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
4 bags of commercially ROP raw tuna cubes thawed remains in sealed packages.
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
Ran dish machine and tested 0ppm chlorine. Operator prime sanitizer manually, then ran multiple times, tested 100ppm. **Corrected On-Site**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
Raw shell eggs stored over heavy cream, raw steak stored over cooked chicken wings in reach-in cooler at cook line. Operator rearranged items to prevent cross contamination. **Corrected On-Site**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition.
4 bags of commercially ROP raw tuna cubes thawed remains in sealed packages.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
A container of sliced ham (50F - Cold Holding) and sliced cheddar cheese (52F - Cold Holding) stored at prep area for sandwiches. Operator moved to reach-in freezer. **Corrective Action Taken**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Cutting boards stained stored on reach-in coolers at cook line and prep area. **Repeat Violation**
Intermediate - Handwash sink not accessible for employee use at all times. Large trash can blocked handwash sink at prep kitchen. Operator removed trash can away from handwash sink. **Corrected On-Site**
