A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Observed scoop with handle stored in sugar container. **Warning**
Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed several wet wiping cloths at front line food preparation station not stored in sanitizer solution. **Warning**
Basic - Working containers of food removed from original container not identified by common name. Observed powder sugar removed from the original container not labeled. Operator label container. **Corrected On-Site** **Repeat Violation** **Warning**
High Priority - Displayed food not properly protected from contamination.
-Observed live flying insects landing on sandwich breads at front line. See stop sale. **Warning**
High Priority - Food contaminated by flying insects.

High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed operator washing and rinsing utensils and food containers without sanitizing. Advise operator to set up 3 compartment sink properly. **Warning**
High Priority - Live, small flying insects found
-Observed approximately 20 live flying insects at front food preparation area landing on clean food containers, clean counter and sandwich bread.
-Observed 4 live flying insects landing on napkin dispenser and single package condiments at self serving station. **Warning**
Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed no date marked on marinara sauce stored in refrigeration. Per operator, sauce open more than 24 hours. **Warning**
Intermediate - Handwash sink used for purposes other than handwashing. Observed hand wash sink at prep station used to stored wiping cloths. **Warning**
