Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Backs of cooking equipment under hood with grease and food residue.
12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Observed employee drink and food in larger two door reach-in cooler with cucumbers and other food for customers. Spoke with employee regarding finding other storage for personal food and drinks.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs over ready-to-eat sauces and cheese in small glass door reach-in cooler. Operator moved to bottom shelf for proper food protection. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Potable water connection to truck on splitter with no vacuum breaker.
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. In larger two door reach-in cooler, observed cooked chorizo cooling thickly packed in large, covered container. Spoke with operator regarding use of ice and other approved cooling methods for better cooling of hot foods.
