A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor tiles missing and/or in disrepair.
Tiles with cracking at dish pit. Also, observed porous tile at dish pit area ceiling. **Repeat Violation**
High Priority - Cooked seafood not reaching a minimum internal temperature of 145 degrees Fahrenheit for 15 seconds.
Salmon at cook line at 125F when cook indicated item was cooked. Person in charge returned to grill and retemped at 177F. **Corrected On-Site**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
In walk in cooler raw pork stored over bags of marinara base. Person in charge moved to appropriate location. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Milk in bar at 44-45F. Person in charge discarded. **Corrective Action Taken**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Paper towels missing from bar. Person in charge provided. **Corrected On-Site**
Intermediate - No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.s
Several employees working over 60 days at establishment have not obtained training.
