A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Building components, attachments or fixtures in poor repair.
1. Several holes in walls in back of kitchen.
2. Hole in ceiling in back of kitchen, near back door.
3. Drywall missing from ceiling above ice machine.
4. Hole in wall behind front counter. **Repeat Violation**
Basic - Dead roaches on premises.
1. One dead roach on floor in kitchen, below oven.
2. One dead roach on floor in kitchen, beside cooler near back door.
Manager swept both during this inspection. **Corrected On-Site**
Basic - Equipment in poor repair.
Walk-in cooler not functioning. Manager stated they will be converting it into a dry storage room and utilizing other freezers for food.
Basic - Plumbing system in disrepair.
Sink connected to dish machine draining directly into a bucket. Manager stated it would be repaired soon. **Repeat Violation**
Basic - Single-service articles not stored inverted or protected from contamination.
Two stacks of single-use foam trays not inverted on top of cooler in server station. Manager inverted both during this inspection. **Corrected On-Site**
Basic - Unclean building components, attachments or fixtures.
1. Walls in back of kitchen near dish machine soiled with dust.
2. Floor under and/or behind equipment throughout kitchen soiled with food debris.
3. Floor inside walk-in freezer soiled with food debris.
High Priority - Food with mold-like growth. See stop sale.
Two cardboard cartons of instant potatoes soiled with mold-like substances on bottom shelf inside dry storage area.
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
1. Flats containing raw shell eggs and pan containing cracked eggs on shelf directly above open pan containing fully-cooked bacon at cookline. Employee moved the bacon to another shelf during this inspection.
2. Pan containing raw pooled eggs stored on shelf directly above open pan containing sauerkraut inside reach-in cooler near back door. Manager moved the raw eggs to the bottom shelf during this inspection. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Inside reach-in cooler near back door:
fish (49F - Cold Holding); chicken (48F - Cold Holding). Manager stated both items were thawed under running water approximately one hour prior and added ice to both items to rapidly cool to 41F.
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Can opener blade on table near dish machine soiled with black substance and/or food debris. **Repeat Violation**
Intermediate - Handwash sink used for purposes other than handwashing.
Large spoon stored down inside handwash sink at cookline. Inspector removed spoon from sink before washing hands. **Corrected On-Site**
Intermediate - No soap and/or paper towels/mechanical hand drying device provided at handwash sink.
No soap or towels provided at handwash sink near dish machine. Manager replenished both during this inspection. **Corrected On-Site** **Repeat Violation**
