Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-02-4    Basic - In-use utensil not stored on a clean portion of food preparation or cooking equipment. Observed scoop inside container with sugar. Operator removed scoop from container. **Corrected On-Site**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed wet towel below red cutting board in kitchen. Operator removed towel. **Corrected On-Site**
16-46-4    Basic - Old labels stuck to food containers after cleaning. Observed clean containers with old labels on drying rack above 3 compartment sink, fruit prep , cafeteria station. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Observed at storage area. **Repeat Violation**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed on storage area dented cans with tomato paste 21 cans. **Repeat Violation**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed in walk in cooler a container with raw beef stored over a container with washed avocados. Operator removed avocados and stored in a different shelf away from raw animal proteins. **Corrected On-Site** **Repeat Violation**
08A-17-6    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw chicken in same container with raw lamb shanks inside walk in freezer. Operator stored raw chicken in a container on bottom shelf. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed no vacuum break in faucet behind back up wash sink in front of pork belly fryer.
