Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed the ice buckets not inverted at the bar. **Warning**
Basic - Food stored on floor. Observed beef and other foods on the walk-in freezer floor. Observed fish and other foods on the walk-in cooler floor. **Repeat Violation** **Warning**
Basic - No handwashing sign provided at a hand sink used by food employees. Observed at the bar. The manager put up a side. **Corrected On-Site** **Repeat Violation** **Warning**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken over beef and pork in the walk-in cooler. **Warning**
Intermediate - Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Observed salmon carpaccio on the menu. As per the manager the salmon is raw. The manager put an asterisk next to the item on all the menus during the inspection. **Corrected On-Site** **Warning**
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Intermediate - Spray bottle containing toxic substance not labeled. Observed a plastic squeeze bottle with a white liquid at the hand sink. As per the manager it is soap. **Warning**
