Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Personal drinks stored near coffee machine near prep area. **Warning**
Basic - Time/temperature control for safety food thawed in an improper manner.
Turkey bacon thawing on prep counter. Instructed operator to place in walk in cooler to thaw. **Warning**
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
Wet wiping cloth stored on prep counter instead of the sanitizer bucket. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
In the walk in cooler - raw/undercooked cold smoked salmon was stored over butter- operator stored properly.
In the reach in cooler raw/ undercooked smoked salmon stored over cream cheese- operator stored properly. **Warning**
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled.
At the cook line operator touched personal drinks then began to engage in different task such as prepping food and touching equipment without changing gloves- educated operator- employee washed hands. **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
At cook line- on top of the condiment cooler butter (cold-holding 73F). Not prepared or portioned today- food left out on the counter for 30 minutes as per operator- Operator instructed to keep on time mark for reaming time

On Menu - lox salmon ( cold smoked salmon products) - with no indication that product Is served raw/ undercooked . **Warning**
